- Preheat oven to 200˚c
- Get some tin foil and cut a large square big enough to hold the salmon fillet and large enough to fold over and hold together.
- Place the fillet in and put in the olive oil, chilli, garlic, lemon and rosemary
- Wrap the foil around the fish to form a secure parcel and place on a baking tray in the preheated oven for approximately 15 minutes until the salmon is cooked.
- Serve in the foil or transfer to a serving plate with the juices poured over. Perfect served with new potatoes or a baked potato.
