Smoked Haddock Coconut Curry with Rice

1. Pour the coconut milk into a pan, add the haddock fillets and simmer gently for 5 minutes

2. Remove the haddock with a fish slice

3. Add the curry paste and tomato segments to the coconut milk and simmer for 5 minutes, break the haddock fillets into large flakes and return to the pan cook 1 minute

4. Serve the curry with boiled rice
