- Score each side of the mackerel 4-5 times with a sharp knife
- Chop the herbs and mix with the oil
- Rub the herbs over the fish, pushing them into the scores on the fish
- Pack herbs and lemon in the cavity of the mackerel and season the fish
- Place on the BBQ carefully and cook approx. 5 minutes on each side depending on size, when cooked remove and squeeze over some lemon juice.
As an accompaniment
Chop some sun dried tomatoes, quarter some cherry tomatoes
Add 1 tbsp baby capers and warm gently in some of the sun dried tomato oil.
